Despite originating in the United States, baked beans are a very British thing to eat, and we enjoy them. Typically Brits eat them out of a can with a Heinz label on them, but we like to make our own.
We make these in the instant pot.
Ingredients
- 1/4 cup of water
- 1 diced onion
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 450g great northern beans, or canneloni beans
- 2 pints vegetable stock
- 1/3 cup maple syrup
- 1/4 cup tomato puree
- 1/4 cup cider vinegar
- 2 tbsp mustard
- 1 tsp ground black pepper
- 2 bay leaves
- salt and pepper, to taste
Method
Press the saute button on the instant pot, and when it gets hot add the diced onion and the 1/4 cup of water. Stir it frequently until the onion gets soft - a few minutes, probably.
Add the smoked paprika and garlic powder and stir it up, so that it coats all the onion and smells fantastic.
Add in the rest of the ingredients, and stir until its all combined, stick the lid on the instant pot, and pressure cook for 75 minutes.
When the cook comes to the end, let the instant pot release the pressure naturally, and add some salt until its tasting right.
I tend to let the beans cool in the pot. As they cool the sauce will thicken up until it gets to that lovely baked beans consistency.
Oh! Don't forget to remove the bay leaves!
