Rosie says all the time that she only married me for my guacamole. I hope that is tongue in cheek, because its super simple to make, and really does taste great!
Ingredients
- 2 avocados
- 1 lime, juiced & zested
- 1 diced tomato
- 1 finely chopped chilli pepper
- 1 minced shallot
- 30g of chopped coriander (about a supermarket packet)
- 1 tsp salt (or more, to taste)
Method
Peal, stone and mash the avocados.
Put the rest of the ingredients into the bowel, and mix.
Chill in the fridge for a while before serving with tostados (deep fried corn tortilla).
