We love to eat this spicy rice with black beans, tortillas and roasted sweet potato.
Its become a go-to favourite because it is quick, easy, and really, really tasty.
Ingredients
- 1/2 cup of white rice
- 4 cloves garlic
- 1/2 can chopped tomatoes
- 1 cup chicken stock
- 1/2 tsp hot chilli powder
- 1 tsp ground black pepper
- 1 tbsp vegetable oil
Method
Heat up the oil under a medium heat, and then when hot, add the rice and keep stirring it until it all gets toasted and bright white.
Add the tomato, chicken stock, garlic, chilli powder, and pepper and bring to the boil.
When it boils, turn down the heat and simmer for 20 minutes. Turn off the heat, and let sit for 5-10 minutes. Give it a stir, and serve!
If you want a pretty garnish for it as it sits in the servicing dish, then a few coriander leaves looks great and adds to the taste as well.
