Rosie and I love to have Mexican fiesta meals. Or at least, that’s what we call them. I know its probably not authentic, but what is? We cook up a whole pile of small Mexican dishes, put them in the middle of the table, and eat until we are full, and this one is a favourite.
Ingredients
- 1 tbsp butter
- 1 can of sweetcorn (325g), drained
- 1 spring onion, chopped
- Grated Parmesan
- 2 tbsp mayonaise
- 1/2 tsp smoked paprika
- Chopped cilantro or parsley
Method
Melt the butter in a frying pan and pour in the sweetcorn. Cook it on a low heat until it starts to brown and go toasty. It’ll take about 10-15 minutes.
Once its charred mix in the mayo, spring onion, parmesan, cilantro or parsley, and some salt, and pepper to your taste.
Serve it with a Mexican feast!
